Five-star burgers by today’s standards are not always easy to come by but boy do we have a homemade burger patty recipe that will have you pulling a three point turn right out of your favourite drive through.

And where the devil is almost always in the detail, let’s start with a few important tips to take into account when putting this recipe together. Where only the best burgers are made tender and juicy, the ground mince meat you choose is probably the most important step to this recipe before you have even begun to make it. 

While most of us usually tend to opt for lean or extra lean mince, the juiciest and most flavoursome burgers are prepared using 15% to 20% fat ground beef mince meat. Relying on the fat to add moisture and enhance flavours, if you are going to splurge on a burger you may as well do it right, making sure that the burger you eat checks all your cheat meal boxes. Another important factor we can only insist on is that fresh is always best. From fresh burger buns to the crispiest, crunchiest greens to compliment, eating stale buns and wilted salad may as well see you eating your standard take out burger filled with meaningless calories and a total waste of flavour.

You will need:

  • 1kg 15% to 20% fat ground beef mince meat
  • 5 ml ground pepper
  • 5 ml salt
  • 30 ml Dijon mustard 
  • 25 ml Worcestershire sauce

 

This recipe will yield four (4) full size 2cm burger patties or eight (8) half size, smaller burger patties depending on your preference.

 

To serve you will need:

  • Soft hamburger buns
  • Cos lettuce
  • Tomato slices 
  • Cheddar cheese slices
  • Sliced raw onions

 

Let’s Get Cooking!

  1. Preferably using a cold glass or metal, large mixing bowl, combine the ground beef mince meat together with the ground pepper, salt, Dijon mustard and Worcestershire sauce.
  2. Gently blend these five ingredients together, taking care not to over mix or handle the mice meat fusion too much. The best way to go about this is to use cleanly washed hands to blend in the most conservative matter.
  3. Depending on the preferred thickness, still using your hands form four (4) to eight (8) burger patties by rolling out “meatballs” and gently flattening them with a spatula.
  4. Ideally cooked on a gas heated griddle, heat to high and cook your patties to your preference and taste.

General cooking guidelines will see one side of the homemade burger patty cook for three (3) minutes and the other side for four (4) minutes for a medium-rare result. Naturally for a more well-done burger increase the time per side being careful not to singe the surface – there is nothing worse than the taste of a chargrilled burger patty.  

 

Once your cooking process is complete bang those burgers together on fresh hamburger buns cut open and buttered with a bed of cos lettuce on top. Next layer thinly sliced tomato and raw onion rings followed by your just grilled homemade burger patty. Top off your creation with a cheddar cheese slice and finished by the surface side of your burger bun.
