Cobra’s Clean Green Zucchetti Spaghetti

What is even more mind-blowing is how to make a lean green, mean Zucchetti Spaghetti using only baby marrow and butter. Zucchetti is its name and going green is its game, taking on an uncanny resemblance of traditional wheat-based pasta. Prepared and ready to eat in a fraction of time and insanely high in antioxidants, proven to reduce blood sugar levels, improve heart health and one of the easiest additions to include in your plant based diet, the benefit of zucchetti green spaghetti reach far beyond the food revolution, serving up a quick fix to a meat free meal, still loaded with health and nutrition benefits.

You will need:

  • 700g of fresh baby marrow
  • Coconut oil or Butter for frying
  • 1 to 2 cloves of fresh garlic
  • 1ml salt

 

Get Cookin’ Good Lookin’

  1. Using a spiraliser, spin up washed and trimmed baby marrows to form spaghetti like spirals. If you prefer you can also use a potato peeler for broader flat ribbons or if you are pressed for time a grater would work just fine too. 
  2. Peele and dice or crush the garlic clove, preparing them ahead of frying.
  3. Melt one to two tablespoons of real butter or coconut oil in a large saucepan and gently fry the crushed garlic until soft and golden brown.
  4. Toss in the raw Zucchetti Spaghetti coating each strand in the butter and garlic basting cooking it hot and fast to keep this clean green spaghetti soft on the outside but with an al dente centre. Add a dash of salt and pepper to taste.

Additional Options.

  • Turn your Zucchetti Spaghetti into a bacon and mushroom meaty alternative frying up a pack of bacon and punnet of mushrooms with butter and garlic in a separate saucepan. We recommend doing this step separate because between the mushrooms, the bacon and zucchini, all of these ingredients sweat quite a bit which often results in a bit of water runoff. If you are at peace with a saucy pretend pasta go ahead and fry these all together, but the recipe would work just a well-cooked separately.
  • Spag Bol Meat alternative - Much in the same ways as you would prepare traditional mince spaghetti bolognese, feel free to go ahead a prepare a tomato and mince bolognese base, simply replacing wheat based dry or freshly made pasta with Zucchetti Spaghetti.
