The Holiday season is fast approaching and it’s time to dig out the old two-piece, hit the beach or head poolside to unwind after the years-long slog. Possibly one of the best breakfast burrito recipes to begin the day with, because this low carb breakfast recipe is so easy on the calorie count it will also have you looking like a snack before you need one!

Easy to put together, low carb, sustainable and super tasty. While this breakfast burrito recipe may say it’s a meal intended for breakfast, in truth, the following is just so good, it could pass a satisfying, low-calorie meal any time of the day.

To make this low carb breakfast burritos recipe you will need:
  • A low carb wrap, gluten-free if possible, but if you prefer, a wholewheat or brown wrap will do fine.
  • Half a green pepper, diced
  • Quarter raw onion, diced
  • 3 to 4 egg whites
  • Half a chicken sausage
  • Two rashes of shoulder bacon with the fat cut away
  • Fresh chilli (optional)
  • Fresh parsley to serve Now let’s get cookin’ good lookin’!
Method:
  1. Lightly oil a large frying pan and heat to high.
  2. Flash fry the diced onion and green pepper just until they start to sweat and soften (keep a little crunch for texture).
  3. Add the bacon and the sausage to the same pan and fry these together with the pepper and onion on medium heat, making sure both are cooked through.
  4. Once the chicken sausage and the bacon are golden brown and cooked well inside, remove from the heat and cut into largely diced pieces.
  5. Separate the yolks of three (3) to four (4) eggs, using the egg whites only.
  6. In a clean pan scramble the egg whites until cooked to your personal preference.
  7. Grab a clean bowl and fold together all the cooked ingredients including the pepper, onion, sausage, and bacon gently mixing the contents of your bikini body breakfast burrito together.
  8. At this stage you may like to add some fresh chilli if you’d like to incorporate some heat to your breakfast burrito flavour as well as a dusting of pepper if you prefer. But do not be tempted to add any salt, the natural salty taste of the bacon, fused together with the fried chicken sausage will be more than enough salt seasoning to create a perfectly balanced burrito flavour.
  9. Next, heat your breakfast wrap in the microwave for around twenty (20) seconds on high or one (1) minute on reheat, just enough to make it sweat.
  10. Spread your low carb burrito breakfast filling onto the wrap to about half to three-quarter way to the top.
  11. To finish, starting from the bottom fold and roll the wrap up to create a snug pinwheel shape. Alternatively, others may prefer to fold their breakfast burrito wrap into an envelope shape. Either way will work fine depending on your preference.
